Densities and Viscosities of Ternary Systems of Water + Fructose + Sodium Chloride from 20 to 40 °C

Abstract

The densities and dynamic viscosities of aqueous solutions of sodium chloride, fructose, and fructose + sodium chloride were measured at temperatures from (20 to 40) °C. The concentration range studied for both sodium chloride and fructose was (0 to 4) mol·kg-1. For fructose + sodium chloride solutions, the experimental values were correlated with the concentration of sodium chloride. The maximum deviation was always less than 0.2%.
