Abstract

In the corn wet milling process, great amounts of many low-valued corn wastes are generated and destined for livestock feed. These residues may contain significant amounts of phytosterols, and they have different properties like antioxidants, anti-inflammatory, anti-carcinogenic and hypocholesterolemic effects. Using chloroform as solvent, the phytosterols from several industrial wastes of corn were extracted and quantified. The results indicated that the phytosterols content is appreciable if it is compared with food sources traditionally rich in phytosterols. Specifically, the fatty fraction waste (AG) with a total content of phytosterols of 42.1 ± 7.4 mg/g, and gluten waste with 2.8 ± 1.3 mg/g, whose majority component was β-sitosterol (82.2 and 67.9%). The wet fiber waste (CH) and dry fiber waste (CS) displayed the lowest contents of phytosterols (0.4 ± 0.1 mg/g; 0.3 ± 0.04 mg/g), sitostanol being the major compound in both (42.2 and 48.6%). En el procesamiento de maíz por molienda húmeda se generan grandes cantidades de residuos de bajo valor comercial destinados principalmente a la alimentación animal. Sin embargo estos materiales retienen fitoesteroles, compuestos reconocidos por sus propiedades antioxidantes, antiinflamatorias, anticancerígenas e hipocolesterolémicas. Utilizando cloroformo como solvente, se extrajeron y cuantificaron los fitoesteroles de cinco residuos industriales de maíz, encontrando que el contenido de éstos en los materiales analizados es apreciable si se compara con alimentos tradicionalmente ricos en fitoesteroles. Específicamente los residuos fracción lipídica (AG), con un contenido total de fitoesteroles de 42,1 ± 7,4 mg/g, y gluten con 2,8 ± 1,3 mg/g, cuyo componente mayoritario fue β-sitosterol (82,2 y 67,9%). Los residuos cascarilla húmeda (CH) y cascarilla seca (CS) presentaron los más bajos contenidos de fitoesteroles (0,4 ± 0,1 mg/g; 0,3 ± 0,04 mg/g), siendo el sitostanol el compuesto mayoritario (42,2 y 48,6%) en ambos residuos.
