Abstract

The automatic control of alcoholic fermentation requires real time measurement of several variables such as specific gravity, substrat and alcohol contents. In this article we present a method for the automatic measurement of the density based on the heat generated during the fermentation which requires no additional sensors in the tanks. It is based on the thermal model of the tank and the only additional requirements are the measurement of the temperature of the surrounding air. The performance of the method will be illustrated with real data, collected in wine making plants.
