Abstract

The work is devoted to the analysis of the fi nished coff ee market in Irkutsk with an emphasis on the assortment and cost characteristics of the sold drink, as well as consumer needs. The quality of coff ee was assessed according to the defi ning organoleptic indicators. The consumer properties of coff ee were studied, and the calculation of its energy value was given. A detailed study of the work of the city's coff ee houses included reviewing technical and technological maps and interviewing baristas. Practical recommendations for optimizing the work of coff ee houses were developed.
