Abstract
In the present study, conductance data on interaction of sodium, potassium, calcium and magnesium in salt form with aqueous solution of AR sugar and plantation white sugar has been reported. These salts were chosen for this study because they are readily soluble constituents as available in cane juice and provide an opportunity to study the interaction of electrolytes — non electrolytes system in aqueous solution as well as sugar crystallization rate. The observations are critically discussed with the conclusion that hydration of ions and hydrogen bonding tendency of AR sugar / plantation white sugar and water plays a vital role independently as well as in a combined state. In addition inversion mechanism has also been discussed in terms of conductivity generation data.
