Abstract

I was presented with the most honourable task to deliver the closing remarks of this Faraday Discussion. Of course I will be glad to do so and I thank the organizers for this privilege. I very much enjoyed reading all 23 papers and listening to the presentations and the lively and high quality scientific discussions. What I aim to do is to put this first Faraday Discussion on Soft Matter and Food Structures in a somewhat historical perspective in order to underline the relevance of soft matter and food structure. Let me start by defining soft matter.
