Abstract

Removing the oyster meat from the shell requires severing the adductor muscle attachments to each shell valve and severing the oyster hinge. A system, consisting of a computer vision control unit and an air and oil driven oyster hinge severing unit, was developed to sense, locate, and sever the oyster hinge. The oyster hinge severing system consisted of an oyster hinge end trimming unit and a hinge severing unit.
