Abstract

Using methods of computation chemistry, the molecular properties of cholesterol and red grape flavonoids (rutin, catechine, quercetin, resveratrol, epicatechin, epicatechin-gallate) and the mechanism of their interaction are studied. The expediency of the use of flavonoids in food for prevention of cholesterol deposits on the blood vessel walls and atherosclerotic diseases are substantiated.
