Abstract

In general, glutamate, aspartate, proline, glycine and alanine were the predominant amino acids in all plaque fluid samples analysed. High concentrations of a compound provisionally identified as δ-amino valeric acid were also detected. Both the total and several individual free amino acid concentrations in plaque from animals on the high sugar diet were significantly higher than the corresponding values from animals on the low sugar diet. The free amino acids in saliva were present at much lower concentrations than those in plaque fluid from the same animal and the pattern of amino acids was different in the two fluids.
