Abstract

In an effect to examine the antioxidant potential of ginger, six popular varietie sof India were evaluated for phenol quantity and quality under different system of assay. Phenol content across different varieties varied between 9.02 and 11.95 mg GAE/g DW. The phenol extract showed greater DPPH (3.60 to 4.12 mg TE/g) over ABTS (0.10 mg to 0.20 TE/g) radical scavenging activity. While FRAP (1.49 to 1.93 mg TE/g) showed significant positive (R2 = 0.84) correlation with phenol content. Based on PCA and average value of each of the chemical character, antioxidant activity potential of the tested varieties are increased in the order < V3S1-8 < Sambak < Gorubarthan.
