Abstract

Spices are widely used in the Mediterranean countries of North Africa and Southern Europe. They are also used for their flavors and aromas and for the sensations they produce. They can also be used as food colorants and antioxidants. The aim of this work is to determine, on the one hand, the chemical composition of the essential oil of Cuminum cyminum of Morocco and, on the other hand, to make a comparison between the chemical composition of the essential oil of Cuminum cyminum of Morocco and the 6 essential oils of Cuminum cyminum of the 6 Mediterranean regions: Spain, Italy, Turkey, Tunisia, Egypt and Syria. The essential oils thus obtained were analyzed and identified by gas chromatography coupled with mass spectrometry (GC/MS). In order to determine the similarities and dissimilarities between the chemical composition of the essential oil of our region and the 6 Mediterranean regions, we carried out the analysis of the principal component (ACP). Antimicrobial tests of essential oils of Moroccan Cuminum cyminum have been studied.
