Abstract

Chlorogenic acid (CGA) has attracted the interest of researchers because of its broad biological activity including antagonistic action against cadmium (Cd). While on the interaction between Cd and bovine serum albumin (BSA), the interferential impact of CGA and its intestinal microbial catabolites (caffeic acid (CA) and phloretic acid (HPPA)) remains unclear. A combined multispectral analysis, surface plasmon resonance (SPR), and docking studies have been carried out to analyze the above system in this paper. SPR and fluorescence quenching showed the presence of CGA, CA or HPPA could decrease the structural change of BSA induced by Cd2+, and the degree of reduction was as follows: CGA > CA > HPPA. Furthermore, CGA and its intestinal metabolites could produce competitive effect in the binding process of Cd2+ and BSA, and this competitive characteristic of phenolic acids is stronger than the chelation between Cd2+ and phenolic acids.
