Abstract

AbstractEleven manufacturers supplied 146 samples of canned corned beef, corned beef with cereal, ham, cured pork shoulder and comminuted ham products. All cans were analysed for salt, moisture, fat, protein and collagen. The mean collagen content ranged between 0.99 and 4.08%. These results are discussed in relation to current international interest in establishing minimum limits for collagen‐free meat protein in processed meat products.
