Abstract
ABSTRACT THE HTST evaporators account for 91% of the 1.6 million kg/h evaporating capacity in the citrus industry in Florida. The characteristics of various evaporators as they apply to citrus juices concentration are described. As much as 23 percent energy savings are demonstrated for an efficient design.
