Abstract

We studied the transglutaminase ( TGase) from bighead carp ( Hypophthalmichthys nobilis) under different conditions ( temperature, pH, DTT) . The optimum temperature and pH of TGase were 37 ~45 °C and 6. 5 ~7. 5, respectively. The optimum concentrations of CaCl2 and dithiothreitol were 0 ~2. 2 mmol·L 1 and 0 ~0. 2 mmol·L 1 , respectively. The TGase activity decreased as concentrations of Na + and K + increased, and was inactivated by Mg + , Cu + , Zn + , Ba + , Fe + , Fe + , Pb + and EDTA.
