Abstract

Publisher Summary This chapter presents the characteristics of carbohydrase reaction in heterogeneous enzyme reaction system utilizing swollen extrusion starch as substrate. The discussion includes (1) the application for production of cyclodextrin (CD) directly from extrusion starch. (2) Determination of the optimal conditions for production of cyclodextrin. (3) Mechanistic and kinetic analysises of cyclodextrin production reaction. (4) The utilization for production of the high purity concentrated maltose and its reaction characteristics. (5) The transglycosylation of stevioside using extrusion swollen starch as a glycosyl donor. It is found that transglycosylation yield of various acceptors from extrusion starch was much higher than from liquefied starch. In addition, the results suggest that the CD production in heterogeneous enzyme reaction system utilizing the swollen extrusion starch seems to have potential advantages for CD production in industrial scale, and further study needs to be conducted.
