Abstract

Abstract Hydrophobins are surface active proteins produced by filamentous fungi. They have a role in fungal growth and their life cycle. Although proteins with similar properties are being found in prokaryotic organisms as well. Hydrophobins are characterized by a specific arrangement of cysteine residues, which form four disulfide bridges in the amino acid sequence. This construction gives hydrophobins hydrophobic properties. These proteins are able to assemble spontaneously into amphipathic monolayers at hydrophobic-hydrophilic interfaces. The unique properties of hydrophobins make them more and more popular with regard to their potential application in industry. New ways of use hydrophobins in various branches of the economy are being developed.
