Abstract

The tomato processing by-products, tomato pomace, consist of peels and seeds. The tomato pomace contains mainly nutritive components such as oil and protein, and bioactive components such as carotenoids including lycopene and β-carotene. The composition of tomato pomace, or peels and seeds separately, in the above valuable nutritive and bioactive components will be presented and their quality and health benefits will be evaluated. The utilization of tomato pomace for the delivery of useful compounds will be analyzed focusing primarily on tomato oil and tomato protein products (protein flour, protein concentrates, protein isolates) and secondarily on carotenoids including lycopene and β-carotene. The technological procedures based on conventional or innovative methods for oil, protein concentrates and isolates, and carotenoids (lycopene) will be discussed. This chapter will explore the possibilities of implementing nutritive and bioactive compounds (derived from tomato processing by-products) in food products. The results of relative studies will be discussed, whereas the current market products will be denoted.
