Abstract

Utilization of sorghum for deriving diverse food products and for industrial uses will result in creating a demand pull for sorghum. This is important for enhancing the area and production of sorghum, fetching a premium price in the market and resulting in health gains for consumers. The diverse products and uses of sorghum are briefly presented in this chapter.
