Abstract

Bulk animal fats and poultry fats derived from rendering are used in different ways including edible, animal feed, and industrial applications. Stability of fats derived from animals is influenced by the fatty acid profile, which in turn depends on animal species, diet, and feed quality. Lipids will undergo oxidation, once initiated with pro-oxidant factors, and would critically influence the keeping quality and shelf life of bulk animal fats. Analytical methods to determine lipid oxidation include physical, chemical, and sensory evaluation, while the oxidation management approaches include selection and utilization of antioxidants, packaging, processing, and storage strategies. Regulatory considerations would influence the application of antioxidants. The chapter also addresses the relevance of accelerated shelf life testing for bulk animal fats.
