Abstract

Cereals are key elements of health and nutrition. Thus, dietary guidance worldwide gives grain-based staple foods (GBFs) prominent positions. These economical providers of carbohydrates, protein, dietary and cereal fiber, vitamins, minerals, and phytochemicals are accessible and acceptable. GBFs provide needed elements in the trend toward plant-based diets. Diets high in whole grains are associated with reduced risks of chronic diseases and increased longevity. While refined grains are not associated with reduced risks, diets constructed with the right mix of whole and refined, enriched, staple GBFs, when eaten with recommended amounts from all other food groups, are associated with overall health.
