Abstract

Rapid global population expansion requires increasingly more nourishment, with healthy plant-based microalgal products as a new trend in high demand. Biomass and bioactive compounds from microalgae and cyanobacteria are used in food products as coloring agents and nutritional supplements, with functional properties for healthcare. This chapter discusses the functional properties of microalgal biomass and bioactive compounds as well as techno-functional food products. Microalgal biochemical composition consists of proteins, amino acids, peptides, polysaccharides, essential fatty acids, carotenoids, and phycocyanins that have functional properties. The biochemical composition of the accumulated biomass depends on the species of microalga and cultivation conditions. Antioxidant, antimicrobial, anticancerogenic, and prebiotic properties of microalgae can be developed for functionality in food products, and utilization of microalgal supplements has wide-ranging applications. Alternative nutritional sources of microalgae as valuable bioactive compounds are required to meet the consumer demand for sustainable food products.
