Abstract

The world of grapes and wines concerns at least 40 countries. The quality and the typicality of wines mainly depend on natural factors, which means that the climates of the different grape-growing regions account for a large part of the diversity of varieties cultivated, viticultural products, the quality, and type of the wines. In fact, temperature influences the composition and quality of grapes. This chapter describes red winemaking in cool climates in the following aspects: the main differences with grapes and color of wine from warm regions, the adapted varieties, the problems of unsuitable phenolic maturity, how does climate change influence grape growing and wine production, and some relevant solutions of the winemaking process are also mentioned, such as the improvement of anthocyanin content and stabilization property.
