Abstract

Mechanical refrigeration and cryogens are the principal methods used in food refrigeration. The most common type of refrigeration machine is based on vapor compression or the Rankine cycle that includes a compressor, a condenser, an expansion valve and an evaporator. The fluid undergoing the cycle is called a refrigerant. Due to their potential deleterious effect on the ozone layer of the stratosphere, the types of refrigerants that can be used are subject to international regulations. Cold storage requires thermal insulation and a source of cold. Insulation is provided by porous materials, the low thermal conductivity of which is due to the stagnant air entrapped in the pores. Refrigerated transportation is the most critical link of the cold chain.
