Abstract

Nutritional approach for management of levels of blood glucose plays a strategically crucial role in the prevention and management of type 2 diabetes mellitus. In order to adapt such a dietary approach, the knowledge of the effect of diet on regulation of glycemic levels and on the associated metabolic dysfunctions is a mandate. This chapter summarizes the outcomes from dietary interventions investigating the effect of dietary constituents on blood glucose levels and diabetic complications. Various components discussed include minerals, coffee, tea, fatty acids, olive oil, fruits, vegetables, carbohydrates, and proteins. Based on the findings presented in this chapter, it is evident that nutritional components have significant and clinically relevant effects on blood glucose modulation and associated complications. Diabetic management with nutritional approach would serve as an adjuvant therapeutic tool and will benefit the diabetic community.
