Abstract

Chlorophylls are natural green pigments ubiquitously present in plant kingdom, which play an important role in photosynthetic process, a vital function for life on Earth. The pigment chlorophyll is an important constituent of human diet as it is consumed as a part of vegetables and fruits. Chlorophylls are classified into three types, i.e., bacteriochlorophylls, chlorophylls, and Chlorobium chlorophylls. Till date, there is shortage of literature reporting the chlorophylls content of plants. This depends upon the cultivar, harvest time, ripening stage, and part of the plant; in addition to this, storage conditions and processing of plants may also play an important role. This chapter covers the structure, classification, isolation, identification, quantification, and pharmaceutical applications of chlorophylls.
