Abstract
The use of zinc oxide (ZnO) nanostructures in food packaging is explored. Antimicrobial activity against foodborne bacteria, mechanisms behind the antibacterial performance of ZnO, recent developments in food packaging employing ZnO nanostructures, nanocomposite films, antibacterial food packaging methods, and safety issues in the application of ZnO nanostructures are addressed in this chapter. The development of new properties of prepared ZnO nanoparticles and their improved antibacterial applications in food packaging are discussed. Fabrication, properties, and applications of ZnO-based bionanocomposite films are also examined.
