Abstract

Insects are traditionally consumed in many parts of the world. Insects are also being traded in other countries due to their sustainable and nutritional value. However, potential food safety hazards associated with the use of insects in food and feed applications are hardly known. This chapter aims to give an overview of potential hazards of insects, control measures, and current global and local regulatory status. Potential hazards may include a range of contaminants, depending on insect species and their metamorphic stages, feed and environment, and processing conditions. The production of reared insects can be more controlled than that of wild-captured insects, since more preventive and control measures can be taken. These measures have to be improved. Specific legislation regulating the use of insects in food and feed is yet to be developed. New insights about safety and legislative issues will support the development of new food and feed supply chains using edible insects.
