Abstract

Biopolymer based edible biopolymer coatings and films provide an additional protective coating for fresh products and also give equivalent effect as modified atmosphere storage by modifying internal gas composition. Several successful edible coatings and films for preserving fruits such as oranges, apples, and grapefruits have been reported. The success of edible coatings for fresh products totally depends on the control of internal gas composition. This chapter aims to help develop a systematic means of edible coating selection to maximize the quality and shelf life of fresh fruits and vegetables. Detailed methods are introduced to select edible coatings based on their gas permeation properties relative to controlling internal gas composition according to specific target products. The potential advantages of edible biopolymer coatings and films make them appealing to food, packaging, and bioengineering scientists as a research focus.
