Abstract

In 10-day pair-feeding experiments, the inclusion of purified kidney bean lectins in egg albumin-based rat diets induced intestinal hypertrophy and hyperplasia, pancreatic enlargement, increased liver weight, thymus atrophy and a loss of muscle mass. The extent to which these changes occurred was directly proportional to the daily lectin intake. A denatured lectin preparation had no detectable effect on the tissues or organs.
