Abstract

The complex electrical impedance spectra of drying apple slices with different moisture content were measured by a HP 4284A precision RLC meter. The impedance spectra of apple tissues were determined from the measured values and approached by the modified-Hayden model. The cell membrane capacity and the ratio of extracellular resistance to the intracellular resistance had decreasing tendency with the decreasing moisture content.
