Abstract

The purpose of this study was to define change in meat food consumption pattern of Korean from 1995 to 2010. Base on the Korea national Health and Nutrition Examination Survey (KNHANES) from 1995 to 2010, We compared 1 portion size of frequently consumed meat food. And we calculated nutritional values of portion size, base on the Korea national Food Composition Tables. The results follow as : The kinds of mainly consumed meat food was increased from 27 to 33 kinds. The most frequently consumed meat was beef plate. Beef plate is mainly used to make the gravy that is basis of the Korean cuisine. Consistently consumed meat are Chicken(lean), pork(rib, belly), pork products(ham, bacon, vienna sausages, etc.) and beef(loin, plate, shank, small intestine, blood). The most consumed meat was duck meat with a portion size of 165g(since 1998). In recent years, Korean eat foreleg, loin, neck lean only, shank, ham of pork that are contains less fat.<This study was financially supported by the National Academy of Agricultural Science of Rural Development Administration>;.
