Abstract—The food industry is undergoing significant trans- formation as new technologies are developed to meet evolving consumer needs, improve sustainability, and enhance product quality. However, introducing these innovative food technologies to the market comes with a unique set of challenges. This paper explores the challenges faced in bringing new food technologies to market, focusing on consumer adoption and regulatory hurdles. It also discusses strategies to navigate these obstacles and offers insights into how companies can foster innovation while ensuring compliance and gaining consumer trust.
