Abstract

SummaryMannitol, trehalose and glycogen contents of Agaricus bisporus fruit bodies were sampled throughout the 46 day period of production of two crops. Maximum trehalose and glycogen levels were consistently observed in the interflush periods, whilst mannitol production was greatest during the flushes. A correlation exists between the sum of the peak glycogen and trehalose values and the yield of the following flush in the first crop. The possible role of trehalose and glycogen as reserves for fruit body production and in the control of flushing is discussed.
