Abstract

Knowledge of the nutritional quality of iron in human milk and infant formula is of great interest to nutritionists and food scientists. In this paper we review the reasons for a larger fractional (but not absolute) iron absorption from human milk than from infant formulas. We also present the results of an in vitro digestion/Caco-2 cell model system comparing the cell iron uptake of different infant formulas to that from human milk.
