Abstract
水稲品種さぬきよいまいは香川県酒造協同組合，香川県農業協同組合，香川大学農学部および香川県の産学官の連携により育成され，2009年に品種登録された．さぬきよいまいはオオセトと山田錦を交配して育成した品種で，オオセトと比較して穂数が多く，多収，千粒重が重い，タンパク質含有率が低い等の特徴がある．酒造原料米としては，おおむねオオセトと山田錦の中間的な性質を持ち，清酒の官能評価はオオセト，山田錦より高く，香りが良く，すっきりとしてまろやかな酒質であると評価された．このため，香川県の地酒用の酒造原料用品種として期待できる．
