Abstract

Abstract Blackberry fruit contains dietary fibre, vitamins, and minerals, along with phenolic metabolites that are likely to promote good health in humans. This chapter describes the components, such as sugars and organic acids, anthocyanins, phenolic monomers and polymers, as well as additional quality components that are found in this fruit. A summary is provided of distinct primary and secondary metabolites crucial to blackberry quality. Blackberry fruit make an excellent contribution to human health, providing a source of antioxidants and fibre, which is a healthy addition to a balanced diet.
