Abstract

The biotransformation of sucrose to fructooligosaccharides (FOSs) was investigated in this study that was aimed at the choice of microorganisms and optimization of process conditions. The best producing microorganisms were, found to be two strains of Aureobasidium pullulans and Aspergillus niger. Further experiments were oriented at the effect of process conditions on the production of FOSs. The yield of FOSs was not affected by pH in the range of 4–8. The temperatures between 50–65°C affected only the first stage of the enzyme reaction and the maximal yeild of FOSs was achieved after one hour of the reaction.
