Abstract

This study aimed to assess the effect of water and alcoholic extract of celery leaves and broccoli flowers (150-300 mg|kg of b.w) on diabetic rats after injected with alloxan (200 mg|kg). Celery leavescontain 88.72% moisture (in wet samples), 36.8% carbohydrates, 19.47% total protein , 2.18% total lipid , crude fibers 19.85%, 20.98% total ash (in dry samples). While broccoli flowers contain 89.43% moisture (in wet samples), 44.8% carbohydrates, 24.79% total protein , 5.8% total lipid , crude fibers 15.29%, 7.67% total ash (in dry samples). The biological experiment showed that both the celery leaves and broccoli flowers cultivated in Egypt were very useful in improving the level of glucose in the plasma of diabetic rats. It has also improved kidney function and liver function. Also leads to an improvement in the level of lipid profile in. The biological experiments indicated that, the broccoli flowers extractions ( water and ethanolic ) represented the best results than celery leaves, and all the ethanolic extracts gave the best results compared with those water, whereas the broccoli ethanolic extracts were the best at all especially the concentration of 300 mglkg after 60 days.
