Abstract

During the research, the content of vitamin C and sugars in the fruits of 20 varieties and forms of the persimmon (Diospyros L.) belonging to the local folk selection spread in Sheki-Zagatala economic region was compared. Varieties of folk selection persimmons with the best biochemical parameters have been identified: ZU-01, ShG-01, ShG-03, ZM-01, BA-01, BA-02 and ZM-01. The dependence of the content of vitamin C and sugars in fruits on the height of collection points was revealed. It has been shown that with an increase in the height of the collection points, the content of sugars and vitamin C in fruits decreases. According to the data obtained, the varieties growing at an altitude of 200–300 m above sea level differed in the highest content of vitamin C: BA-02 (39,60 mq/%), BQ-01 (39.80 mq/%), ShG-03 (39.70 mq/%) и BA-03 (38.00 mq/%); the lowest – growing at an altitude of 600–800 m above sea level: QN-01 (28.38 mq/%), QN-02 (28.40 mq/%) и QV-02 (29.00 mq/%). The highest sugar content in fruits was found in forms growing at an altitude of 200–500 m above sea level: ShG-01 (23.00%), ZU-01 (23.00%), ShB-01 (22.00%), ShG -03 (22.00%) and BA-01 (22.00%). The lowest indicators of sugars were recorded in persimmon varieties of folk selection QN-02 (17.00%), QZ-04 (17.00%), QV-01 (18.00%), QN-01 (18.00% ), QZ-03 (18.00%), growing at an altitude of 500–800 m above sea level.
