Abstract

The development and utilization of new germplasm resource is an important basis for promoting mitten crab industrial development. A total of 90 wild-caught mitten crabs were collected from Suifenhe (SFH), Liaohe (LH) and Nanliujiang (NLJ) river basins. This study investigated the edible yield, color, proximate composition, fatty acid, and free amino acid composition of wild-caught mitten crab edible tissues from three river basins. Results illustrated that SFH crab had significantly higher meat yield (MY) compared with LH and NLJ crabs (P < 0.05). Higher proportion of fatty acids and free amino acids were also observed in SFH crab, e.g. 22:6n3 (DHA), 20:5n3 (EPA), n-3 unsaturated fatty acid (PUFA), n-3/n-6 PUFA, ∑DHA+EPA, and total free amino acids (∑TFAA) in gonad. LH crab had higher concentration of total essential fatty acids (∑EFA), FAAs and h/H in hepatopancreas, while NLJ crab accumulated high content carotenoids in the carapace and hepatopancreas, AI and TI in edible tissues. In summary, significant differences of biochemical composition and quality were found among these three wild-caught mitten crabs, which provides basic materials for the development and utilization of mitten crabs.
