Abstract

Japan is one of the few countries that legally prohibits precautionary allergen labelling (PAL) by establishing official methods for detecting the protein of allergenic ingredients (allergens) and setting the threshold of protein content for the national labeling system. This study was conducted to develop the quantitative risk-assessment methods for allergic-reactions to foods containing allergenic ingredients and to verify the validity of the evaluation criteria of Japan's food allergy-labeling system.
