Abstract

The complex natural starchy raw materials for lactic acid production undergo gelatinization and liquefaction before being enzyme-saccharified to glucose and then fermented by Lactobacillus to produce lactic acid. Eliminating the two-step procedure will enable the direct conversion of starchy biomass to lactic acid by bacteria with both amylolytic and lactic acid-producing characteristics. Unfortunately, very few amylolytic lactic acid bacteria currently have a strong capacity to generate lactic acid at high substrate concentrations. This chapter reviews several amylolytic lactic acid bacteria involved in lactic acid biosynthesis from biomass and their food processing and industrial applications.
