Abstract
Coconut water is sterile when in the fruit; however, its rich nutrient composition is paramount to make it an excellent medium for the growth of microorganisms. In addition, the sanitary conditions of the manipulator, environment and utensils used in opening the fruit can be sources of contamination. For these reasons, the objective of this work was to evaluate the microbiological quality of coconut water ( Cocus nucifera L.) marketed at the coconut square kiosks on the edge of the city of Macapa, Amapa. 9 samples of coconut water were obtained from the kiosks that commercialize the product on the edge of the city of Macapa, known as Praca do Coco. They were transported to the Laboratory of Microbiology - LAMIC of the Institute of Scientific and Technological Research of the State of Amapa - IEPA. Where the microbiological analyzes were performed. For thermotolerant coliforms the enumerations ranged from 7.4 to 150 MPN / mL. Of the 9 samples evaluated, only one sample was outside the standard required by law. For Salmonella sp. all were negative. Keywords: Coliforms; Salmonella ; Contamination.
