Abstract. Astaxanthin (3,3'-dihydroxy-I², I²-carotene-4,4'-dione) is the main carotenoid pigment found in aquatic animals, and has been used in food, cosmetic and medical application due to its high antioxidant activity. In this study, a new method using high pressure processing (HPP) to extract astaxanthin from shrimp (Litopenaeus vannamei) discards (shrimp shell and shrimp head) at ambient temperature was studied. The effects of hydrostatic pressure (0.1~600 MPa)i¼ŒLiquid-to-solid ratio (10 to 50 mL/g), and pressure holding time (0~20 min) on the yield of astaxanthin were investigated by quadratic rotation-orthogonal composite experimental design.
