Abstract

Introduction. As a reaction to the uncharacteristic fluctuations in temperatures during the flowering period of the main honey plants, the collection of elite honey, such as linden and acacia honey, has significantly decreased in Ukraine in recent years. The goal of the work. . Characteristics of physical and chemical properties of bee honey from a private apiary in Brovary district of Kyiv region for 3 years and establishing its compliance with quality standards. Materials and methods of research. 67 samples of bee honey of different botanical origin were studied by organoleptic and physicochemical parameters. Results of research and discussion. When analyzing the results of the study of honey in 2019 (13 samples), the water content ranged from 16.6% to 19.6%; in honey samples in 2020 fluctuations of indicators 16.0% to 20.1%; Honey samples in 2021 ranged from 16.3% to 20.2%. It is established that the diastasis number in honey in 2019 ranged widely from 6.1 to 44.8 units. Gotte. In the study of 15 samples of honey in 2020 ranges from 7.8 to 45.8 units. Gotte. The content of GMF in honey samples in 2019 in most cases below the detection limit, <10 mg / kg, except for one sample 15.36 mg / kg. Higher content of hydroxymethylfurfural GMF was determined in 3 samples of honey in 2021: 25.07 mg / kg, 28.8 mg / kg, 71.0 mg / kg. Conclusions and prospects for further research.Based on the research, it is possible to draw conclusions about the fluctuations of the main indicators of honey quality depending on changes in climatic conditions and their importance in protecting consumers' rights to quality, standardized products, in our case honey of the highest and first grade.
