Abstract
Limited data regarding the nutrition knowledge of the elderly hinders the development of appropriate educational materials that specifically meets the needs of this population. The objective of this study was to assess the nutrition knowledge of the participants in Arkansas Senior Citizen Centers with the findings to serve as guidelines for the development of educational curriculum. A 65 question survey was developed and administered in six senior citizen centers and completed by 126 participants. The sample was 75% female and an average age of 72. The average score on the nutrition knowledge section was 65% correct responses. Specific areas of incorrect responses were misconceptions on protein food sources and the amount of protein needed in the diet, and the relationships of Vitamin C and the common cold and other common myths related to nutrition. The findings indicate a need for nutrition education programs and materials for the senior citizen centers to dispel nutrition myths.
