Abstract

Microorganisms have been playing a significant role in the production of useful substances to the mankind. They have been in use in domestic applications such as yoghurt, bread and wine production since ancient times. Ever since the Louis Pasteur explained role of microorganism in food fermentation, scientists have been trying to discover the microorganisms that can be used for various industrial applications. They have been developing new technologies for the isolation of microbes which can be used in the production of specific desired products with high yields. Many organisms from yeast, bacteria and fungi are found to be useful in the production of numerous varieties of foodstuff-related applications like bread, dairy products, alcohol and beverages, enzymes, organic acids, food colours, etc. These microorganisms are added to the food production process to impart attractive colour, flavour, aroma and texture and enhance the marketability of the products. With the advancement of technology, novel methods have been developed which opens extensive applications of microorganisms in food and beverage industries.
