Abstract

It has been experimentally established that spectroscopic methods can be used to create a technological process condition for the development of methods for obtaining natural dyes used in the food and pharmaceutical industries. It is shown that the use of spectroscopy makes it possible to obtain coloring pigments rich in biologically active molecules, vitamin preparations and vital elements potassium, Ca, Fe, carotenoids, anthocyanins and flavones. The developed method can also improve the technology of obtaining products with high qualities with increased shelf life. The composition of the final product does not allow starch, herbicides, inorganic compounds that lead to obesity of the body.
