Abstract

Biologically active substances with a complex of antioxidants might increase a lifespan and reduce the risk of age-related diseases. Honey might be one of these promising substances because it contains polyphenols, which are characterized by antioxidant properties. The aim of our research was to explore an antiradical potential of various honey samples. Samples of 10 honey types were collected in eastern and southern regions of Kazakhstan. The water content in the honey samples varied from 16.3 to 18.3%. Polyphenols from the honey samples were extracted trough the liquid-liquid extraction with ethyl acetate. The antiradical activity was examined using the 2,2-diphenyl-1-picrylhydrazyl (DPPH·) radical inhibition method. Ethanol was used as a blank solution. In more details, 20 µl of the extracts were mixed with 2 mL of 100 µM DPPH-ethanol solution. The reduction in absorbance was measured at a 515 nm wavelength 10 minutes after DPPH-ethanol solution addition. The antiradical activity of the aqueous-alcoholic extracts of the honey species varied from 6 to 46%. The highest percentage of DPPH radical-inhibition was detected in the honey extracts from Allium nutans and polyfloral mountain honeys and was 46% and 41%, respectively. Table.
